yep. mayonaise. it's basically just oil and egg and some seasoning... so it keeps the fish moist. The skin is still on when you do a whole fish, so it doesn't make the meat... weird. Then they'd just let you dig in with a fork. It's all fiesta style.
Also popular to just fry the ever-loving-crap out of them and serve them whole with some rice.
Island food isn't usually about presentation, it's about comfort foods and quantity. :)
