With the ones i had time to play the most fun i have had gameplay wise have been with Rainbow Reactor, Vetrix, Raw Data, Aeon and Bean Stalker.
If story is more of an interest then i recommend Ionia and Robinson: The Journey.
They both have a really good story, beautiful scenery, good graphics and cinematography.
I would also recommend Cave Digger, but i think the sequel from what i have seen is so much better also it has more of an open world and optional multiplayer.

I can vouch for Moss (which you already played) and Pistol Whip is a blast (better Beat Saber with guns), though i really have to play more.
Subnautica is also great and immersive, underwater world and swimming with looking around in VR + controls via gamepad (sitting game)
